This menu is a collection of places, flavors, and memories. It’s inspired by the way food lives around the world. shared on sidewalks, grilled over fire, served without ego. Every dish pulls from somewhere real: a back alley in Tokyo, a roadside pit in Texas, a family kitchen in Laos.
We use tallow instead of seed oils because the quality of fat changes everything. how it cooks, how it feels, how it lives in your body. What you're eating here is clean, deliberate, and rooted in the kind of flavor you don’t forget.
